Stripped bass are one of my favorite fish to eat but they're only really good fresh out of the ocean. When I was a kid my father would catch five or six big ones off the South Jersey shore. And then when I lived on East 17th Street in New York I'd go to the Italian fish markets on First Avenue and buy whole stripped bass which made a spectacular meal with their heads and tails still on. But later in Maine I discovered that people there called them dogfish and wouldn't eat them because they thought they were too oily. Happily we have them again here in California but they're much smaller.
